Step1:The egg white and yolk of 5 eggs are separated into 2 basins without oil and water.
Step2:Add 40 grams of sugar, 60 grams of milk and 40 grams of corn oil to the egg yolk in turn and mix them evenly (until the sugar melts). Then sift in 90 grams of flour and mix them in one direction.
Step3:Add 30g sugar to the egg white in three times. When it's lifted, it's firm and sharp (it's hard to use electric beater or manual beater to achieve this effect).
Step4:The egg yolk liquid is added into the protein in three times and stirred evenly. Stir up and down with the rubber spatula. Do not circle.
Step5:Pour the batter into the 8-inch cake mold. Hold it firmly in both hands and pat it on the table for several times. The bubbles will pop out.
Step6:Preheat the oven at 200 ℃ for 5 minutes. Put in the batter. Change the temperature to 130 ℃ and heat it up and down. Bake for 50 minutes. This time, it may be that the egg yolk is over stirred, which causes the surface to crack. However, the surface becomes flat and cracks close after the air cools and retracts.
Step7:Take it out and turn it upside down to cool it on the grill. Separate it with a release knife close to the mold. Turn it over and tap the mold bottom. Cut the cake off the bottom with a long knife.
