Step1:Fry the fish until golden on both sides. Wipe the pan with ginger slices before frying. Do not stick to the pan. Keep the skin intact.
Step2:In another oil pot, stir fry onion, ginger, garlic, anise and star anise. Then add cooking wine, soy sauce, salt, sugar and water (stock). Put in fish. After stewing, turn down the heat and collect the juice. When stewing, pour the soup on the fish from time to time. Finally, if you want to make the soup more rich, thicken it with starch.
