Step1:Wash the shrimps off the shrimps line. Pour into a bowl. Add cooking wine, salt, pepper, egg white and starch. Mix well. Make it thick and tasty.
Step2:Beat the eggs in a bowl to make the egg liquid. Add a small amount of water starch, salt and oil. Cut the leeks and put them in.

Step4:Put the pot on the fire. Heat the oil in the hot pot. Saute the shrimps. Don't take too long for this step. Take out the shrimps as soon as they are sauteed.
Step5:When the edge of the egg starts to solidify, put in the shrimp. Use a shovel to gently push and pile the eggs toward the center of the pot, instead of breaking up the egg liquid as usual. Let the eggs and shrimps in the middle of the pot bake slowly. Turn off the fire when they are ripe. Turn off the fire and let the pot stay on the stove. Use the residual heat to make the egg liquid fully mature.

Cooking tips:1. Add some thick water starch into the egg liquid. Stir well. This will make the egg fluffy and smooth. 2. The shrimp will be very smooth and tender after being starched with egg white. 3. Don't wait until the eggs are fully cooked to put shrimp. The fried eggs will be very old and lose their tender taste. 4. There are skills to make more oil and delicious dishes when slicing shrimp.
