Step4:It took about 8 hours this time. It's two to three times the size before the hair. The dough surface is covered with obvious bubbles. If it gets wet, it means it's done. If it's not done enough, the steamed bread will be hard.
Step5:Adding a small spoon of alkali is the most challenging. It turns yellow and less sour. I usually knead it for a while after adding alkali, and then smell the dough. No sour taste is enough. Then knead it all the time. Knead the alkali for 1520 minutes. Without kneading, there will be yellow spots. When kneading, try to put less dry flour. Because the dry flour is not fermented. The more you put, the harder the steamed bread will be. Knead the long strips and cut them into small pieces. If you want to make steamed bread, you can steam it directly in the pot. If you want to make steamed buns, you can flatten them and roll them into pieces to pack stuffing. Cook on the top of the steamer. Do not steam the cloth at home. Smear oil in the pot. Avoid the sticky pan. After the water is boiled, steam it for 5 minutes. After a little adjustment (the minimum point outside the stove), steam for 10 minutes.
