Kaikoushi. It's a traditional Chinese snack. It's a famous fried snack in old Beijing. It's named because it's cracked like a grin after being fried with baking powder. Especially in the new year's day when we eat. Take its good meaning. I hope we laugh every day. Every year we laugh.
Step1:First mix the low gluten flour, baking powder and edible alkali flour.
Step2:Put the eggs in the bowl and add sugar, water and vegetable oil. Stir with your hands and beat for at least 2 minutes.
Step3:Sieve in the powder mixture.
Step4:Knead the dough and wake up for ten minutes. Here you can adjust the hardness and softness of the dough.
Step5:Roll it into a long cylindrical strip.

Cooking tips:Hint: because the water absorption of flour is different, you should master the hardness and softness when you are mixing with dough. Add some water to the hard surface.
