I fumbled twice according to someone else's prescription. The first time I didn't add water to the filling. The second time I added more water, it was a little thin. It affected the setting but didn't affect the taste. The water needed to be appropriate to have the feeling of q-bomb. Pure lean meat is not as good as fat and lean meat.
Step1:Add a little ginger, garlic, seafood, soy sauce and salt to the meat stuffing. Stir it again. The more delicate it is, the better. Then add egg, starch, flour, sugar and pepper. Mix it clockwise and evenly. Add water in several times. Add a little each time until the meat stuffing is fine and strong. Steam it in the mould for 30 minutes. Cool it for several hours. Slice. The longer you refrigerate, the better.
