Step1:First, steam the tofu in the rice.
Step2:Boil half a pot of water. More water, or it will be very sour later.
Step3:Marinate the fresh fish head. Put in vinegar, sugar, ginger, salt, soy sauce. Marinate for ten minutes.
Step4:Put the oil and salt in the boiling water and ginger. Because the salt has been put before, it's better to taste the soup in proper amount. Add ginger to get rid of the smell.
Step5:Put the steamed tofu in to absorb water. Boil it, and then boil the marinated fish heads together.
Step6:Don't rush at this time. Wait until the soup is cooked. Because there is vinegar and sugar. It tastes really sour and sweet.
