Step3:Beat the protein. Add 55g white granulated sugar into the protein in three times. Beat to the hard foaming. That is, the egg beater's head is in a right angle shape. The egg basin is buckled upside down. The albumen paste inside will not flow.
Step4:Take 1 / 3 of the albumen paste and pour it into the yolk paste. Quickly mix it up and down.
Step5:In the previous step, pour the batter into the rest of the batter. Quickly mix it up and down.
Step6:Put it in the middle layer of the preheated oven. 165 degrees. Bake it for 40 minutes (please adjust the temperature and time properly according to the characteristics of your own oven).
Step7:When the cake is cold, cut a small semicircle on each side to make the top half of the car. Just shape it a little according to the way you want it to look.
Step8:400g light cream and 40g white sugar. Beat. Cut the main part of the car into two pieces. Spread the whipped cream and diced fruit (strawberry, mango, canned peach, etc. or add some pudding and pickled raisins).
Step9:Spread the cream and fruit. Cover the car with another slice of cake.
Step10:Cream the main part of the car. Put two small semicircles on it. Cream the middle part so that the two semicircles can stick together well.
Step11:Put all the cream on it (the windshield position and the side glass position of the car should be trowelled. It's ok if the other positions are not trowelled. It needs to be mounted).
Step12:Melt the dark chocolate in water. Put it in the decoration bag. Cut a small hole in the front of the decoration bag. Draw the outline of the window on the cake. Stick on four Oreos to make wheels.
Step13:For the rest of the cream, take a small part and add the edible pigment to make it yellow for standby. For the rest, make it red (the edible pigment dosage is very small, just a little). According to the outline. Use red for mounting. Side window and some words. Squeeze yellow cream. I use a small five tooth flower mounting mouth.

Cooking tips:1. The cake embryo uses 8-inch Qifeng cake. Sponge cake is OK. 2. The key of Qifeng cake lies in the beating of protein and the turning of cake paste. It should be noted that the container must be free of water and oil; the final batter after mixing shall be turned over without circle. It shall be turned up and down quickly. 3. The key to flower mounting is the cream sending. Pay attention to the sending state all the time. It feels like the cream is solidified. It's fine. Don't overdo it (when it's hot, you can put a big basin under it. Put some ice in the big basin. It'll be easier to send some). 4. This cake is not very demanding for mounting. Just be patient.
