Step1:The mushroom bought from the supermarket. Put it in light salt water. Soak it for ten minutes. Wash it.
Step2:I forgot to take photos in the process of blanching. Blanch the washed mushrooms. Boil them for another two minutes. Then pass cold water. Tear into small flowers. Pinch slightly to remove water.
Step3:Starch and flour are mixed in two to one ratio. Add water and stir to make a paste. Don't be too thin. Otherwise, it won't hang. Add some salt to the batter. Season with chicken essence.
Step4:It's better to start the pot and sit on the oil. The amount of oil is less than that of mushrooms. There's more waste. Although it can be reused, the oil heated many times is not healthy.
Step5:When the oil is 70-80% hot, put in the mushroom covered with paste. If you can't judge the oil temperature well, you can dip your chopsticks in the batter first. Fry with medium or small fire until it is set and fished out.
Step6:Second re fry. Heat the oil to 90% heat. Put in the shaped mushroom for re fry. Twenty seconds or so. The mushrooms will be crisper.
Step7:Sprinkle it with salt and pepper or dip it in. Great.
Cooking tips:1. If you want to make the mushroom crispy and puffy, you can add some baking powder to the batter. 2. There's not much salt in the batter. There's salt and pepper behind it. Otherwise, it's too salty. There are skills in making delicious dishes.
