Fried tripe is a famous snack in old Beijing. It has a history of more than 300 years. It's crispy and tender, and it's fragrant. It's deeply loved by people in Beijing and Tianjin.
Step1:Today, I saw fresh mutton tripe in the market. Suddenly I want to have a burst of tripe. One or half of the tripe. First, simply wash it three times until it is clean.

Step5:Add five spoonfuls of starch again. Continue to knead for three minutes. Both sides are the same. Rinse. Starch has a strong adsorption. It can clean the dirt on the surface again.

Step9:Cut them separately. The name of each part of the tripe is different. I didn't always get it clearly. It's basically as shown in the picture. The lighter the color, the thinner and the softer it is.
Step10:Dip ingredients - sesame paste, leek flower, fermented bean curd, remaining chili oil and scallion flower soup can be added with personal taste.
Step11:Add twice the sesame paste and warm water to slowly stir and dilute. Add the leek flower tofu milk. Mix well again. You can taste it and add some raw soy sauce and sugar to taste.
Step12:A pot of water with a few pieces of ginger and a section of scallion. A few pepper to boil. These are also to smell. The water itself does not add salt, and the taste is all in the dip.
Step13:Take out the onion, ginger and pepper. Next filter spoon. Add one or two at a time. This one is a little small. Add one or two at a time. After eight seconds of water, quickly take out the water control. That's OK. You can have a crisp and tender taste. It will be hard to chew for a long time.
