Skin shrimp. It's called crawfish here. My husband bought 2 jin. I picked the bigger one for steamed. The smaller one for fried shrimps.
Step1:Soak prawns in water for a while.
Step2:After cleaning, cut it into 2 small sections with scissors. Cut off the shrimp whiskers, shrimp feet and other places that you don't eat.
Step3:Marinate it with seasoning wine.
Step4:Sliced ginger and garlic.
Step5:When the oil is hot, add ginger and garlic and stir fry.
Step6:Stir fry with chili sauce and soybean sauce.
Step7:Stir fry shrimps with skin. Add some water and simmer slightly.
Step8:Add chicken essence and pepper to taste and stir well.
Step9:Finished product. Spread lettuce on the bottom of the plate. Size shrimps on the top.
Cooking tips:Marinate the shrimps with cooking wine. My husband doesn't like spicy food, so I use soy sauce and garlic sauce. If you like spicy food, you can add bean paste. I didn't add salt because the sauce was salty enough. There are skills in making delicious dishes.
