It's a favorite dish. I always order one when I go out for dinner. I make it myself. When I want to eat it, cooking, steaming or frying is a unique dish. It's delicious.
Step1:Wash the shrimp, remove the tail, cut off the head, cut off the whisker, and bake it in the pot. Do not add any seasoning. After turning red, continue to stir until there is no water and the shrimp is slightly dehydrated.
Step2:Wash and air dry the glutinous rice. Beat it into glutinous rice pieces. Don't beat it too fine. It's better to have a little grain.
Step3:Put the glutinous rice in the pot and stir fry it over low heat. It will smell of rice slowly. Stir fry until the glutinous rice turns yellow.
Step4:Mash the ginger and garlic.
Step5:The prawns are ready to cook.
Step6:After the ginger and garlic are beaten, pour the shrimp into the rice noodles and stir fry for a while.
Step7:Mix the shrimp rice powder with the chopped ginger and garlic puree. Add a little pepper and a little salt.
Step8:Mix it well and put it in a container that can be sealed after cooling. Use chopsticks to put it in. Be sure to put it firmly. Otherwise, the air may get moldy.
Step9:After sealing, put it in the refrigerator or in a cool and ventilated place for three days. Take it out and put it in the pot and boil it with water. Then, when you want to eat later, you can choose one part and steam it and pour it with sesame oil. If you like heavy taste, you can add more pepper and salt. Or you can fry it with oil and dry it. After fry, it's another flavor. This small dish is salty and fresh. It's OK to use shrimp skin instead of fresh river shrimp. Use shrimp skin to put less salt.
