Step1:All materials are put into the bread bucket (egg → milk → sugar → salt → bread powder → yeast) in the order of liquid first and then powder. Note that the sugar and salt are open in two corners of the bread barrel. Put the yeast in the end (yeast can not contact with salt directly. If the bread machine has a yeast box, it can be put directly into the yeast box). (different brands of flour have different water absorption. You can reserve some in the liquid volume of the formula to be added when mixing).
Step2:Start the bread machine and flour program. Usually 10 minutes. After one program, the dough is smooth. Put in the softened butter. Start a new blending program.
Step3:After the two blending procedures are completed, the dough is smooth and elastic. There will be some small bubbles on the surface. The requirements of the small meal bag for the dough are not as high as toast. It does not need to reach the full expansion stage. So it does not matter if there is no glove film. Feel uneasy. You can start the mixing procedure again. The whole process is 30 minutes. Don't mix the noodles for too long. It will affect the taste too long.
Step4:The dough is still put in the barrel of the bread machine. Select the fermentation key of the bread machine to make one hair. The whole process is one hour (the summer can be shortened to about 50 minutes). The dough should be twice as big. Stick some flour on your fingers and insert a hole. The dough will not shrink or collapse.
Step5:After the fermentation is completed, start the mixing procedure and exhaust. Take it out after 5 minutes. Or take out the dough and knead it manually to exhaust the air. After exhausting the air, evenly divide it into 16 dough groups. Knead the dough and cover with fresh-keeping film.
Step6:Within an hour or so of the dough waking up, we can make jam and cranberry cream stuffing on top of the bread. Let's make the mayonnaise first. After butter softens at room temperature, add sugar powder.
Step7:Stir well. Add the egg mixture slowly.
Step8:Stir evenly, in a delicate paste.
Step9:Sift the low gluten powder. Put it in the batter.

During the second fermentation, you can put one plate in the oven for fast fermentation and the other plate for room temperature fermentation.
