One of the four famous foods in Zaozhuang. The main characteristics of dishes are spicy and fragrant.
Step1:Cut the chicken into pieces. Drain the water for later use. Scallion, ginger, garlic, dried chilli and screw chilli are cut and ready for use.
Step2:Heat the pot. Add some oil. It doesn't matter if you have more oil. It will taste better. Heat the oil and add pepper. Stir in the chicken for a while. Stir for a while. Add some cooking wine. Continue to stir. Add in onion, ginger, garlic and dried chilli.
Step3:When the fried chicken crackles, add some vinegar (to separate the meat from the bone. It's easy to remove the bone when eating). Stir fry for a few times, then add soy sauce. Use proper amount of oil and salt. Stir for a few times. Pour in boiling water (remember to use boiling water). The water is not over the chicken.
Step4:Let's simmer for a while. When the water is about to dry, pour the cut screw peppers into the pot. Turn to stir fry. (you can also add some potato chips as a side dish when you add screw peppers) when the juice is almost gone, you can turn off the heat and get out of the pot... It's better to put some cilantro on the plate when you leave the pot. Of course, it's ok if you don't add it.
