Step1:The eel is washed and ready to use. Put ginger slices on the bottom of the plate and spread them on the floor. Sprinkle with scallion.
Step2:The eel is cut into sections and plates. Put cooking wine, sprinkle fine salt (add some soy sauce when leaving the pot. It's OK without adding). Add salad oil (or olive oil). Put on the preservative film on it (if there's no preparation at home, it's OK to turn the plate upside down. Add 2 minutes more time) and put it in the pot. Steam for 13-15 minutes.
Step3:Turn off the heat and put in some scallion shreds. Cover the chili shreds (there are no more at home. Put some medlar for color matching) for 30 seconds to 1 minute. It's OK to leave the pot.
