Step1:Add ginger slices to boiling water. Pour in pig's hooves and scald them (to remove the fishy smell). Scoop them up. Pass them in cold water (to increase meat elasticity).
Step2:Hot oil in the pot. Stir fry ginger and garlic first. Then add cinnamon, star anise, fragrant leaves and pepper. Scoop it up. Then add in the oil and add in the ice sugar to stir fry the sugar (low heat). Then add in the pig's hoof and stir fry it evenly. Then add in the ones just stir fried. Then add in the soy sauce, old soy sauce, yak oil, cooking wine, beer (without salt). Stir fry. Scoop it up and pour it into the pressure cooker. Then add water to the pig's hoof. And add soybeans.
Step3:It's tender and sweet.
