I like Qifeng cake very much. Sometimes I bake one for breakfast or afternoon tea.
Step1:Prepare the ingredients and weigh them.
Step2:Separation of egg white and yolk (containers for egg white and yolk must be kept clean without oil and water).
Step3:Put the egg white aside first. Beat the yolk evenly with the hand beater.
Step4:Add milk and corn oil. Beat until the yolk, milk and corn oil blend.
Step5:Sift in the flour with low gluten. Stir it back and forth in the shape of Z with the hand beater. Do not rotate the mixer to avoid the gluten.
Step6:Stir until there is no dry powder or granule. The ingredients are completely integrated (as shown in the figure). Put aside for use.
Step7:Add a few drops of lemon juice to the egg white. Use the electric beater to beat until it is thick.
Step8:Add a third of the sugar.
Step9:Low speed to foam fine. Add second of 1/3 fine sugar.
Step10:Whisk at high speed until there are obvious lines. Add the last third of sugar for the third time.
Step11:Send it at high speed to lift the eggbeater. The sharp corners of the eggbeater are firm and upright.
Step12:Preheat the upper and lower tubes of the oven at 150 ℃.
Step13:Divide the beaten protein into three parts. Take the middle third and add it into the yolk paste. Use the silica gel scraper to cut, mix and mix evenly.
Step14:Pour the mixed yolk paste back into the remaining two-thirds of the protein. Continue to mix evenly in the same way.
Step15:Pour the mixed cake paste from the middle of the mold into the mold. Drop it vertically from a high place for a few times to shake out big bubbles.
Step16:Put it into the preheated oven and bake it for 30 minutes at 150 ℃.
Step17:It's been baking for 20 minutes. The cake is very long.
Step18:It's time. Take out the mold from the oven (pay attention to hot hands). Drop it vertically and shake it out. Buckle it upside down on the air line.
Step19:After cooling thoroughly, it will be demoulded in reverse.
Step20:Qifeng cake is completely demoulded.
