Step5:It is suggested that you use the cooking tool. It is more suitable to use the spoon instead of the spatula, because the tofu is not fragile with the spoon without sharp edge. Put 2 tablespoons of Pixian bean paste, then add 1 tablespoon of cooking wine, 2 tablespoons of soy sauce, a little pepper powder, stir well.
Step6:Add some warm water. Boil and pour in tofu.
Step7:Such tender tofu. Add sugar, salt and minced meat. How to stir fry it? Here are two ways. One is to hold the handle of the pot with both hands and turn it slowly. Because there is soup in the pot, the tofu pieces will spread evenly during the process of shaking slowly. The tofu pieces will also spread together with the minced meat. The other way is to use the spoon to push slowly. Here you remember that the spoon is pushed outward. When you push it out, it will be suspended and then pushed outward. Instead of the usual stir fry. When you push it out, it will be pushed out again Pull back. Then go back to the area. The edge of the spoon will break the surrounding tofu pieces.
Step8:No need to cover. Just open the lid and cook for about 3 minutes. If you use hard North tofu, the stewing time can reach 78 minutes. Therefore, it's not necessary to put too much soup in tofu making in the south, because when the juice can't be collected, it will be out of the pot soon. If you want to speed up the juice collection here, put some water starch into the soup to make it thicker. Of course, it tastes better.
