Let my husband buy me a piece of tofu. He bought a piece of North tofu. This is not the best material for making Mapo Tofu. But I want to eat Mapo Tofu so much. So I made this dish. Before I went to university, I didn't know tofu was divided into North and south. I didn't know until my roommate Bu Bu told me. South bean curd is also called gypsum bean curd. Its texture is soft and delicate. It is suitable for making soup or salad. North bean curd is also called marinated bean curd. Hard bean curd. Suitable for stir fry. -
Step1:Prepare a piece of tofu (because my husband bought it. He forgot the weight. The market paid 2 yuan for it). Mapo Tofu with South tofu taste better.
Step2:Cut the tofu into square pieces of equal size. If you don't like the smell of bean, you can follow the tips below the recipe to remove the smell and then filter the water for use.
Step3:Prepare the ingredients. Chop the meat into mince (I have prepared a little more meat. Half of the picture is OK). Cut the green onion into onion. Chop the ginger and garlic.
Step4:Pour in the oil in the hot pot. Heat the oil at a temperature of 5% or so (the oil surface fluctuates. When it's about to smoke), turn down the heat. Put in the pepper and stir it to make it fragrant, and then take out the pepper seeds and throw them away.
Step5:Put in a spoonful of Pixian bean paste and stir in red oil. (there is only a little bit of bean paste left at home. Less than a tablespoon. The quantity is a little small, so the color is not too red.).
Step6:Stir fry the ginger and garlic together to make it fragrant.
Step7:Put the minced meat into the small fire and stir fry the minced meat until it's slightly dry, which will be more fragrant. (if it's not too troublesome, stir fry the minced meat in another pot or dish it out before frying the pepper oil. Pour in the tofu together.
Step8:Pour in a bowl and a half of high soup or clear water (not too much tofu). Add salt (not if the taste is light, because bean paste and soy sauce are salty), chicken essence, sugar and soy sauce. Boil the fire and simmer for 3 minutes. Let the soup boil.
Step9:Pour in the prepared tofu. Try not to stir. If you want to move, just push it down with the back of the spatula. Cook on low heat for about 5 minutes.
Step10:Take a small bowl and add starch + cold water. Mix water starch to thicken. Pour in twice. Put the onion for the first time (leave a little for decoration) and pour in half of the starch. Let the tofu hang on the juice to taste. Pour in for the second time. When the soup is thick and bright, sprinkle with pepper noodles and you will be out of the pot.
Step11:Serve it on a plate. Sprinkle the rest of the scallion and decorate it. A plate of spicy and delicious Mapo Tofu is ready
Cooking tips:Tofu soaked in hot water can remove the beany smell. It's hard for many people to accept the beancurd smell. Soak the beancurd in hot water for 5-10 minutes before cooking. It can remove the peculiar smell. Add salt to hot water to make tofu tighter. It's not easy to break. There are skills in making delicious dishes.
