Step1:Slice the loin. Thin it a little. Pour in some cooking wine, black pepper and salt and marinate for about 10 minutes.
Step2:After marinating, first dip in a layer of dry starch. Then dip in a layer of wet starch (the wet starch should be a little thicker) and fry it in the pot. When the skin turns yellow, take it out. If you want the crispy one, fry it again.
Step3:Add two spoons of vinegar, five spoons of sugar, a quarter of salt and a spoonful of ketchup (mainly for color mixing. It's ok if you don't add soy sauce, but you have to add more sugar to add soy sauce). Then add a third of the starch and pour it into a proper amount of water to stir and make the soup.
Step4:Put a little oil in the pot. Pour in the fried sirloin. Add in the soup and stir fry until the soup is even and thick, then the pot will be out.
