Yellow croaker is my wife's favorite fish. The small ones are usually fried. The big ones are braised.
Step1:Shredded ginger, chopped scallion, chopped scallion leaves, chopped garlic.
Step2:Get rid of scales, internal organs and gills of the yellow croaker and wash them. Put the onion and ginger into the fish's belly. Pour cooking wine on the fish and the belly. Marinate for 10 minutes.

Step4:Fry the minced garlic with the oil of the fish just now. Add the bean paste and stir fry well. Add water, sugar and light soy sauce to boil. Put in the fried fish. Turn the heat to boil for 5 minutes. Then take out the fish and put it in the pan. Heat the remaining soup to collect the juice. Thicken it with starch. Pour it on the fish. Sprinkle with chopped green onion. Finish the work.
Cooking tips:Fried fish doesn't stick to the pot. First heat the pot. You can cut a piece of ginger. Wipe the inside of the pot. Then put the oil. When you fry fish, you need to fry it well and turn it over. When you don't fry it well, the fish will stick to the pan. It will break when you turn the skin.
