Step1:Wash the thighs of chicken with water. Cut potatoes with a hob. Cut carrots with a hob.
Step2:Start the oil pot. Stir fry the scallion, ginger, garlic, star anise and dried pepper in the pot.
Step3:When the carrots are golden, put in the washed chicken thighs. Add some sugar, cooking wine and soy sauce.
Step4:Add potatoes. Add salt and boiling water. Cover and simmer for 20 minutes.
