Fermentation can be finished in about two hours.
Step4:How is dough fermented? Stick flour on your fingers and poke a hole in the dough. If the hole does not retract, it means the fermentation is finished.
Step5:The dough after kneading ferments to twice the size.
Step6:Exhaust the fermented dough. Divide it into 12 preparations of average size. Round as shown in the picture. Wake up for 20 minutes.
Step7:Place in a warm and humid place for secondary fermentation. About 4060 minutes. The fermented dough is twice as big as before. As shown in the picture, it is squeezed together.
Step8:Brush the surface with egg white.
