Step1:Clean the pig's hoof. Put water in the pot and boil it with onion and ginger. Put in the pig's hoof and boil it for two minutes with the lid open. Remove and cool it with cold water. Drain.
Step2:Stir fried sugar - put a tablespoon of salad oil in the pot. Put a tablespoon of crushed ice sugar (wrapped with a cloth and crushed). Cook over low heat until the melted ice sugar is darker.
Step3:Pour in the scalded pig's hoof. Stir fry until it's covered with sugar.
Step4:Pour in two tablespoons of soy sauce. Stir fry half of the soy sauce until all the pig's hooves are colored
Step5:Pour in a spoonful of cooking wine and ginger and stir well.
Step6:Put one star anise and ten prickly ash into the tea bag. Put them in the pot together with the onion
Step7:Add enough water to the pig's hoof. Turn the water on low heat and cover for two hours.
Step8:Open the lid and turn the heat to collect the juice. Pour some sesame oil into the pan and stir well before leaving.
Cooking tips:1. The pig's hooves should be boiled in an underwater pot. Boiled water can make the skin of pig's hoof tighter. It is not easy to rot when stewed. 2. Use rock candy. Rock candy will make pig's hooves red and bright. 3. In order to make the finished product soft and tender, we only let it go raw, but not salt. Salt coagulates the protein most easily. So don't put any salt. 4. Control the fire. When stewing, it must be on the minimum heat. Stew in a cast iron pot for two hours. The common pot needs to be stewed for about three hours. Small fire is the key to ensure that the pig's hoof is soft and tender. Big fire will make the pig's hoof stew rotten and shapeless. There are skills in making delicious dishes.
