Step1:Cut streaky pork. Rinse with water until there is no blood. Drain. Cut cowpea into sections. Slice ginger and scallion.
Step2:Stir fry the sugar in the pan until the sugar bubbles are thin and fade away. Pour the dried pork slices into the water. Keep the small heat and stir fry until the sugar is completely wrapped on the surface of the meat
Step3:Turn on the fire. Stir fry the cooking wine and a little old soy sauce evenly, then turn off the fir
Step4:Take a casserole. Heat it and pour in a little cooking oil. Stir fry ginger slices and scallions
Step5:Pour the streaky pork in the wok into the casserole. Heat the boiling water until it's not over the meat (it's better to add enough water at one time. If you want to add water in the middle, add boiling water as well). Add a small spoon of sugar and a small amount of salt.
Step6:Cook in high heat. Turn to low heat and simmer for half an hour. Open the lid. Add the homemade dried cowpea (if it's the dried cowpea that is sold outside, it needs to be soaked before use).
Step7:Continue to simmer for half an hour or so until the soup becomes less and les
Step8:Open the lid and turn to medium high heat. Add chicken essence and stir fry until the soup thickens.
Cooking tips:1. Choose one layer of fat and one layer of lean meat. Don't choose one that is too fat. The more layers of fat and thin, the better. This kind of stewed pork is not greasy or woody. 2. At last, when you thicken the soup, always stir fry. But don't make too heavy gestures. Otherwise, the meat will be scattered. 3. I use microwave homemade dried cowpeas here. The water is not collected very dry. So I put it in here and cook it directly. If you use the dried cowpea or the cowpea sold in the market, you need to soak the dried cowpea before it can be put into the dish. There are skills in making delicious dishes.
