Step1:Mix the shrimp (I bought it as a semi-finished product) with salt, corn starch and vegetable oil. Marinate for 10 minutes. Dice the ham and carrot. Chop the chives. Break the eggs into egg liquid. Prepare the corn and cooked peas. Put a spoonful of oil in the rice. Mix the rice well. Stir it to a loose state for later use.
Step2:Boil the water in the pot. Put in the diced carrots, corns, peas, ham and scald for 1 minute. Remove and drain the water.
Step3:Heat up the pot. Add 2 tablespoons of oil and heat to 80%. Stir fry the shrimps until they turn white, then fish them up.
Step4:Pour out the oil in the pan. Wash the pan and heat it. Pour in the salad oil. Turn around the pan. Let the oil stick around the pan. Heat the oil to 80% heat. Pour in the broken egg liquid and quickly fry the egg liquid.
Step5:Add rice, hot vegetables and ham. Add all the seasonings. Stir fry constantly over medium heat.
Step6:Add in the fried shrimps and stir fry them for a few times. Sprinkle with scallion. Drizzle with a little sesame oil.
