Step1:Chop the spareribs into small pieces. Wash them. Peel and seed the white gourd. Cut into thick slices. Cut the kelp into shred
Step2:Blanch the cleaned spareribs. Skim off the froth and take out.
Step3:Wash the foam off the ribs with warm water.
Step4:Add water to the purple clay pot. Boil. Put the spareribs. Add ginger slices, scallions and cooking wine.
Step5:Bring to a boil. Turn to a low heat. Simmer for 50 minutes. Add salt, wax gourd slices and kelp shreds. Simmer for another 20 minutes.
