Step1:Cut 500g ribs into chunks. Blanch with water and remove. The purpose of blanching is to get rid of blood.
Step2:Put the blanched spareribs into water. Add in scallion and ginger. Cook for 30 minutes. Leave the broth for later use.
Step3:Marinate the ribs with 1 tablespoon cooking wine, 1 tablespoon raw soy sauce, 1 half old soy sauce and 2 tablespoons vinegar for 20 minutes, then remove, wash and control the water. Leave the marinated Soup for standby. The spoon is the small porcelain spoon we usually use to drink soup. It's not the big spoon to hold soup.
Step4:Fry the spareribs in the pan until golden. Don't put a lot of oil. Turn over several times.
Step5:Put the fried spareribs in the pot. Marinate the soup, half a bowl of broth and three spoons of sugar. Bring to a boil. Add half a teaspoon of salt to improve the taste.
Step6:Simmer for 10 minutes in a small heat and collect the juice in a large heat. Sprinkle with chopped green onion for embellishment.
