Step1:Chop pork ribs into small pieces (the meat seller can help you chop them). Put them into a basin. Add a spoonful of cooking wine and a spoonful of raw soy sauce. Mix well. Cover with plastic film. Marinate for 20 minutes (the marinating time can be longer. It's easier to taste).
Step2:Enlarge the oil in the pot. I use the method of frying. When the oil is heated to 60%, put in the marinated spareribs. Fry them into golden yellow and take out the oil control (pay attention to safety. Don't scald them).
Step3:Keep the bottom oil in the pot. Put in the scallion and ginger slices to burst the fragrance after the heat. Pour in the fried ribs. Then add a small amount of raw soy sauce. Add some old soy sauce. Stir well. Add boiling water to the surface of the ribs.
Step4:Add sugar and vinegar to the pot. (sugar and vinegar are in the proportion of two teaspoons of sugar to one teaspoon of vinegar). Mix well. After the big fire is boiled, skim off the froth, add proper amount of salt, close the lid, and simmer for about thirty minutes in a low fire.
Step5:Thirty minutes later, the soup in the pot is less and less. Turn on the fire. Boil the thick soup. Turn off the fire when the soup is wrapped on the ribs. Sprinkle the cooked white sesame seeds on it. Then put it out of the pot and put it on the plate.
