I'm a big fan of miso soup. When this little bowl of slightly mysterious hot soup was placed in front of me, the world was full of peace and serenity (a little exaggeration, but it could bring infinite comfort to my stomach and heart). However, the miso soup you drink in many restaurants feels like a pot washing water full of MSG and miso. And it may be done in some places... Miso soup looks very easy to make. It's just put miso sauce in the broth. It's done in three times, five times and two times. Is that so? Not at all. I'm going to introduce a super version of miso soup, which is made of dried kelp, shiitake mushroom and fish flower, plus lactone tofu, spinach and onion flower. The flavored soup made in this way will be richer and healthier than the one you have eaten in the Japanese food store. Even if you only drink miso soup in a simple meal, you can also get a sense of fullness and balanced nutrition. I have a big barrel of miso in my fridge. I often
Step1:Rinse the kelp and dried mushroom with cold water and put them into a medium-sized soup pot.
Step2:Pour in 2800ml of water. Soak for 1 hour.
Step3:After the hair is soaked, heat it over medium heat. The soup is slightly boiled. Take out the kelp. Turn it into a big fire. The soup is boiling. Once it's boiling, turn it into a small fire and add in the fish. Simmer over low heat for 20 minutes. Stir occasionally.
Step4:Filter the cooked soup into another pot. Japanese high soup is the base soup of miso soup. Keep mushroom for future use. Heat the soup pot over medium low heat. Put the miso in the soup. Stir until it is completely melted. Slice mushrooms. Put them in the pot.
Step5:Stew for 10 minutes. Add tofu, tender spinach leaves and chopped green onion.
Step6:Stew for a few minutes and you'll be out of the pot.
Step7:Enjoy this steaming and super delicious soup.
Cooking tips:Note - 1 teaspoon = 5g, 1 tablespoon = 15g1. The wooden fish flower is cooked and smoked with fresh bonito. It can be cut into thin petals like flowers. You can buy and cook delicious food from the supermarket.
