My friend gave 2 dried abalones with 5 heads. So I tried to make them. It took 11 days in total. But I enjoyed the process very much. Especially after the taste was very affirmed by someone...
Step1:Soak the dried abalone in an oil-free basin for 24 hours, then wash the surface and viscera. Change water and soak for 2 days. (if it's hot, put it in the refrigerator
Step2:Put the dried abalone in the casserole. Add enough water at one time. The water will be useful in the future. Cover and boil for 10 minutes, then turn off the heat (before boiling, pay attention to stir the bottom of the anti stick pot). Do not open the cover and soak in boiling water for 24 hours. The next day, boil again, turn to low heat for 10 minutes, turn off the heat and continue to soak for 24 hours. Repeat for 7 days. Add enough water at one time. Don't change the water in the middle of the process. Don't pour the water that has been boiled for 7 days. Otherwise, install it. It will be used as the soup bottom of abalone juice in the future.
Step3:Prepare a larger casserole with all the ingredients. Cut the ribs in half. Cut the local chicken in half. Cut the Jinhua ham into thick slices. Blanch the ribs and the chicken.
Step4:Put the spareribs on the bottom. Put the abalone with hair on it. Put Jinhua ham and chicken on it.
Step5:Add enough water and bring to a boil, then turn to medium heat and simmer for 612 hours. My dried abalone is not many and not big. It simmers for 10 hours. The smaller dried abalone can be simmered for 6 or 7 hours. Because the casserole is not big enough. You need to add water many times in the middle of the process. You must add boiling water every time. Do not add cold water. The last half hour is left. Boil the abalone water which has been boiled for 7 days before and pour it into the casserole to boil.
Step6:Take out the abalone after cooking. Strain out the soup. Do not leave the meat residue. Use a small pot to boil the soup again. Add oyster sauce and water starch to thicken the soup. The soup will have a salty taste. If it is not salty enough, add some salt to make it suitable for your taste.
Step7:Put the abalone in a plate. Pour the abalone juice up. You can have the meal.
Step8:A lot of abalone sauce can be mixed with noodles. It's very delicious. I think noodles with abalone sauce are better than abalone.
Cooking tips:1. Abalone itself has no taste. It can be softened by simmering while absorbing the taste of chicken, spareribs and Jinhua ham. 2. Stew Abalone with casserole. 7 days of boiling hair is also the best casserole. 3. After cooking, it can be soaked in abalone juice and stored in the refrigerator. Before eating, cook for 10 minutes to make it hot. 4. The first time I did it. It was quite successful. Actually, I only used chops and stewed chicken. I forgot to put Jinhua ham. You can also see that your recipe is to use old hen, pig's hoof, Jinhua ham and scallop. There are skills in making delicious dishes.
