Red root is a kind of dehumidification herb. I don't know its scientific name. It's just because its root is red after cooking. So it's called red root in local dialect.
Step1:Wash and cut spareribs. Mix with a little salt. Let stand for 10 minutes. There is some residual soil at the root of red root. Wash it several times.
Step2:Boil the water in the pot. Pour the ribs into the pot. Blanch the blood. When the water boils again, skim off the froth and drain the ribs.
Step3:Put the spareribs and red roots in a bowl. Add some water, a small amount of salt and cooking wine. Put them in a pressure cooker and stew them in water. When the air is out, turn the heat down for 20 minutes.
