Oyster fry is a famous traditional snack in Fujian Province. This is someone's specialty in my family.
Step1:Add a small spoon of salt to the oyster. Gently grasp it with your hand. You will see the sewage in a short time. Then clean it with running water and drain it.
Step2:Add a little oil to the pan, heat up and pour in the dried oysters. Add ginger cooking wine and fry them for a while (the process of frying will continue to water out). Cut off the raw materials and put them in reserve.
Step3:Wash and cut the shallots and cilantro. Put them in the large plate.
Step4:Add a tablespoon of sweet potato starch.
Step5:Put in three eggs.
Step6:Stir until there is no granule and let stand for a while.
Step7:Add the fried oysters. Add a little salt, chicken powder and pepper and mix well.
Step8:Put some peanut oil into the pot and heat it to 80%.
Step9:Stir the oyster paste in the pan, pour it into the pan and spread it out. The egg liquid will soon set. Shake the pan after setting.
Step10:Fry it until it's golden on both sides (someone wants to perform throwing the pot. It turns out to be a gorgeous failure).
Step11:It's on the plate. You can drizzle your favorite with Thai sweet and spicy sauce.
Cooking tips:1. Oysters have a lot of water, so you need to fry them in advance to get extra water. 2. Stir to prevent starch from sinking before entering the pot. There are skills in making delicious dishes.
