Step1:Duck wings. Dense brine (Guilin rice flour brine. This one is authentic only in Guilin. It can't be made with raw soy sauce, fennel, grass fruit, Xiangye, licorice and cinnamon instead of boiling
Step2:Boil the water in the pot. Pour in the prickly ash, star anise, dried red pepper and ginger. Blanch duck wings. Pick it up. Remove the impurities.
Step3:Pour in the brine, sesame oil, and marinate with the remaining ingredients of the blanching water for about half a day.
Step4:Stir fry the ice sugar over low heat. After saccharification, pour in the marinated duck wings and wrap them in sugar.
Step5:Pour in clear water, not over the duck wings, add some soy sauce, and bring to a boil over high heat (only the ones without brine can be poured into various seasoning ingredients). Marinate for 1520 minutes. Let the soup dry.
