My mother comes from a big girl. She is the youngest of the six brothers and sisters of the x family. However, the twists and turns of life make mother almost omnipotent. Under the elegant and refined temperament, she contains a strong independence and kindness. She is the perfect woman for my sister and me. If she is by my side, French onion soup will be one of the dishes I choose to make for her. Since she was a child, her mother has been fond of eating western food. She is also more selective. But she didn't have much chance to enjoy it later. I think French onion soup is a bit like her - the essence of warm fire. It is warm and implicit. It looks simple and exquisite. Chastity is always classic. I hope this bowl of soup takes 1.5 hours to make will satisfy her and let her relive the taste of childhood. This recipe is for two. -
Step1:Shred two onions. Don't be too detailed. Just like picture cuttin
Step2:Medium heat. Add butter and olive or corn oil. The reason for using two kinds of oil is that the butter is delicious and fragrant, but it is easy to burn when the oil is low. Add corn oil to improve the ignition point. The oil will not burn black.
Step3:Add the chopped onion to the medium low heat. Stir until the onion is soft and transparent. For at least 15 minutes. Be careful not to let the onions burn or turn golden.
Step4:Add wine. Red and white wine will do. If there is no wine, it is OK to add 3 tablespoons cooking wine. Just take the acidity in the wine. Add beef broth. If there is no beef broth, chicken soup is OK. If chicken soup is high, add a small spoon of old soy sauce. It has a wonderful effect of imitating beef soup. Finally add thyme, salt, pepper and bay leaf. Stir well.
Step5:Boil to the boi
Step6:Turn down the heat. Cover the pot. Leave a very small slit. Simmer for 1 hour. Check every 20 minutes in the middle. Don't stick the pot. Attention. Be sure to keep the fire down. If the fire has 10 gears, set it to gear 3 or 2.
Step7:Dada. The soup is ready. Don't be busy. It's not over yet. Remove the cooked bay leaves and thyme branches from the soup.
Step8:In a bowl that can be put into the oven.
Step9:Toast two pieces of bread. French stick or any European bag. Don't be too soft. I used Italian chibata bread. It's my favorite. Sprinkle the bread with parmesan cheese crumbs. Spread the Parmesan cheese on top. I made two pieces of poroflora cheese. Because I like cheese better. Generally one piece is enough. You can use only one cheese. You can choose any one.
Step10:Put it in the oven and bake for 24 minutes. Don't leave the oven for a few minutes. Check it in 2 minutes. Then check it in 1 minute and 1 minute. Otherwise, it's easy to get burnt by accident.
Step11:It's a little golden until the cheese is roasted, as shown in the picture.
Step12:With a slice of bread. It's ready to eat.
