Step1:Cut potatoes. Boil a pot of water.
Step2:Put the shredded potatoes in. Blanch. The time of blanching depends on the quantity and thickness of the potato shreds. The thin potato shreds are usually blanched for less than 1 minute. If there are more potato shreds, wait until the water is boiled and then take out the appearance of about 1.5 to 2 minutes.
Step3:Prepare a basin of cold water. Quickly remove the boiled potato shreds into the cold water. If there is ice, it is better to put it into the ice water.
Step4:Pour oil into the pot. Put about 20 pieces of pepper. 3 dried peppers. Deep fried oil. (every time I make complaints about oil, I have to say. Really, the pot looks like oil. Actually it's a relatively normal amount of oil)
Step5:Scoop out some of the pepper. It tastes better. Then pour hot oil on the drained potato shreds.
Step6:Add 3 tablespoons vinegar, 1 tablespoon soy sauce, 1 tablespoon sugar, and some salt. You can also add condiments such as chicken essence for freshness. But I never add those things to my personal cooking.
