This simple dry fried string bean is salty, fragrant and crispy. It's the best rice companion. There are vegetables and meat. They are nutritious. They satisfy your good appetite in summer. I've improved on the traditional dry fried string beans - 1) add ginger to the minced meat as one of the marinades. Ginger powder can improve the taste. It tastes like wonton filling or meat bun filling. 2) Add the old soy sauce to the minced meat. It will be better for coloring. 3) Stir fry the beans separately first. It tastes better. It won't be poisoned by the green beans. 4) Stir fry is the soul of this dish. Add 2 tbsp water at the end. Stir fry it over high heat. It tastes crispy. The taste of this dish is better than that of the sauce.
Step1:Rinse and control the water content of kidney bean.
Step2:Persimmon, pepper, garlic and ginger are ready.
Step3:Mix minced meat and marinade ingredients well. Stir until all sauces are absorbed by minced meat. Marinate for 1520 minutes.
Step4:Cut the beans into small pieces.
Step5:Heat the pot with 2 tbsp oil. Put in the chopped string beans.
Step6:Stir fry the beans. Spread the beans on the bottom of the pot. It's easy to heat them evenly.
Step7:30 seconds. Then stir fry and repeat the above steps for several times until the beans are cooked and the surface is slightly burnt. Turn to a low heat to avoid frying. The whole process takes about 58 minutes. (for faster cooking, add a few drops of water each time to produce steam.)
Step8:Put the Fried String beans on the plate for later use.
Step9:Add 1 tbsp of oil to the pan and turn to high heat. Add minced meat. Stir fry until discolored. Don't stir fry too many times. Make sure it's tender inside and outside.
Step10:Next, turn to medium heat and add garlic.
Step11:Add minced pepper (if used) and chopped red persimmon pepper.
Step12:Continue to stir fry for 1 minute.
Step13:Add seasoned beans, 1 / 4 teaspoon sugar, 1 teaspoon incense, 1 tablespoon soy sauce, 1 / 4 teaspoon ground white pepper, 1 / 8 teaspoon salt (depending on taste) and 2 tablespoons water.
