My family like stewed bone. Although the price of pork is high at this stage, it can't keep the pace of eating. In fact, compared with eating in a restaurant, it's still very cost-effective to make your own. It's not too much trouble to make your own. It may not be better than the chef's-
Step1:Prepare ingredients - main ingredients - appropriate amount of pig bone (1150G for me). 160g for carrot and 240g for yam. Condiments needed - onion, ginger slices, pepper, star anise, cinnamon, fragrant leaves, dried pepper, sugar, Huadiao wine (cooking wine), soy sauce, soy sauce, salt, a little peanut oil. The seasoning can be increased or decreased according to personal preference. Please refer to the list of ingredients above for my dosage.
Step2:Wash the bone with clear water twice and then soak it in water for a period of time. The blood can be removed.
Step3:Cut the scallion into long sections. Peel carrot, wash and cut into pieces. Soak yam in a water bowl after peeling. Cut into pieces when it needs to be put into the pot to prevent oxidation and blackening.
Step4:Pour the blood out of the bone and wash it. Put enough cold water into the pot. Put in the bone. Open fire and boil it. Wait for the blood foam to float for a while. Turn off the fire. Take out the bone and wash it.
Step5:Put a little oil into the clean pot. Put in the rock candy. Stir fry the rock candy slowly. Turn off the heat when the brown bubble appears. Pour in the meat bones and stir fry until the color is even.
Step6:Stir fry the bone evenly and turn it on low heat. Add some condiments such as onion, ginger, pepper, star anise, fragrant leaves, cinnamon, etc. and stir. Pour in a bottle of Huadiao wine along the edge of the pot. Then add 2 tablespoons of raw soy sauce. 1 tablespoon of old soy sauce. Stir evenly and immediately add hot water. The amount of water should be less than the ingredients. Add the remaining onion and dried chili in. Boil the boil for a while, then simmer the small and medium lid.
Step7:Stew for 35 minutes. Open the pot cover and add the carrot pieces. Cut the yam into pieces. Add some salt to taste it to the salt level you can accept. Cover the pot cover again and stew until the carrots and yam are done.

Cooking tips:❇️ The bone is soaked for more than one hour in advance to remove blood.
