Tofu is a unique food in China. From the south to the north, the methods of tofu are different. There are tender tofu, old tofu, tofu flower, dried tofu, tofu bubble and so on. Step1:To make this dish, use old tofu. Tofu that is too tender is easy to break.

Step5:Pour proper amount of oil into the non stick pot. Lower the tofu. Be careful not to get too close. It is easy to stick together. Fry slowly over low heat.
Step6:Fry the tofu until it is slightly scorched. Turn it over one by one and continue to fry. Like to eat the older one. Fry it a little more. Like the tender one. Just a little yellow.
Step7:After the tofu is fried to the extent that you like, pour in the sauce mixed in front of you. Cover the pot cover and simmer for a while. Longer time is more delicious.
Step8:The soup is almost done. Open the lid and sprinkle with chopped green onion and cauliflower.
Step9:Finally, turn off the heat and put it on the plate. Don't completely drain the juice. It's too dry and doesn't taste good.
Cooking tips:1. This dish must use old tofu. Tender tofu is easy to break. Don't cut tofu too thick. It's not easy to taste. It's not more than one centimeter thick. It's better to be a little bigger than mahjong. 2. Seasoning can be as you like. Hot and sour taste or sour and sweet taste can be used. Taste the good taste first. Adjust if you are not satisfied. It is suggested to use rice vinegar for sour and sweet taste. The taste of aged vinegar is too strong. 3. Tofu is old and tender as you like. It takes longer to fry if you like to eat it crispy. It takes shorter to fry if you like to eat it tender. It's OK to fry it slightly. It's better to fry it a little, but it's not easy for people with bad stomach to digest.
