Purple potato is rich in selenium, iron and anthocyanin in addition to its nutritional component of common sweet potato. Not only because of its nutrition and taste, but also because of the charming purple. Usually, when making dessert, porridge and beverage, you can add some purple potatoes. Step2:The tremella and lotus seeds are soaked 23 hours in advance
Step3:Tremella wash away dust and other small impurities, tear small flowers, remove the core of lotus seeds, and wash them
Step4:Wash purple sweet potato, peel and dice
Step5:Add 3 bowls of water to the pot. Put the tremella in the pot and boil over high heat. Turn the heat to low and simmer for 40 minutes until the tremella becomes soft and the soup thickens
Step6:Then add the purple potatoes and lotus seeds. Cook over medium heat. Turn the heat to low and continue cooking for about 30 minutes
Step7:The soup is thick. When the purple sweet potato is soft and waxy, add in the ice sugar to melt and turn off the fire.
