Step1:Wash the elbows and remove the bones. Then use cotton thread to tie the meat and bones to the original shape of the elbows.
Step2:Put your elbows into cold water and blanch them. Then take them out and wash them with clean water.
Step3:Put the elbows in the pressure cooker. Add the water just before the elbows. Put the scallions, ginger slices, cooking wine, ice sugar, star anise, cinnamon and tangerine peel. Boil the water and press for 25-30 minutes.
Step4:Turn off the heat and exhaust the air. Open the lid. Add raw soy sauce and salt to the pot. Stew in medium heat. Pour soup on the elbow with a spoon and turn the elbow over continuously until the soup is thick.
Step5:Take the cotton thread out of the pot, put it on a plate and sprinkle with scallion.
