Noodle noodle is a unique traditional noodle snack in Southern Fujian Province. Xiamen and Zhangzhou are called noodle noodle . Quanzhou is called noodle noodle ;. The noodle line is made by mixing flour, water and salt, kneading strips, spreading potato flour, winding on two sticks, slowly pulling them apart, and finally drying them outside. Fujian noodle has its own salty flavor, so when making it, there is no need to put salt.
Step1:The required ingredients are as shown in the figure. If you can't buy the red noodle line in the picture, you can also use the ordinary white noodle line.
Step2:Pour the oysters into a bowl. Add 3 tablespoons of sweet potato powder. Gently hang the oysters evenly on the sweet potato powder.
Step3:In a small bowl, add 4 tablespoons starch and some water. Stir until there is no hard block.
Step4:Boil water in the pan. When the water boils, put the oysters in the pan and stir gently. When the water boils again, remove the oysters and put them in cold water.
Step5:In another pot, pour in 2000 ml of high soup. After boiling, pour in 20 g of fish fillet. Then put out the fire and let stand for 2 minutes. Remove the fish fillet and keep the bottom soup.
Step6:Pour the noodle into the pot. Add the remaining 10 grams of fish fillet, 2 tablespoons of shallot crisp, 1 tablespoon of soy sauce and 1 tablespoon of sugar. Stir well.
Step7:After boiling, turn to a low heat and cook for another 10 minutes. Add 1 teaspoon pepper and stir well. Pour in the starch water and thicken.
Step8:Pour into a large bowl. Put the boiled oysters on top. Pour vinegar, mashed garlic, chili oil and coriander leaves on top.
