My mother's big plate chicken is my favorite. Today I'll share with you the taste of my mother and Xinjiang.
Step1:Wash the frozen chicken. Cut into pieces and put into the pot in cold water. Pour in the cooking wine. After boiling, skim off the froth. Drain and set aside. If it's fresh chicken, wash it and cut into pieces.
Step2:Prepare the remaining ingredients - scallion, garlic, ginger slices. Soak the potato slices in water for standby. Cut the red and green peppers. Wash and cut the peppers.
Step3:Heat the oil in a hot pot. Put the sugar in the pot and stir it slowly. Make the sugar fully dissolved (to make the sugar bubble. Turn down the fire so as not to burn the sugar). When the sugar is burnt, it will turn yellow.
Step4:Put in chicken pieces and stir them evenly. Stir them up and down immediately. Make each piece of chicken sugar colored. (this link must be patient. The chicken will come out of the water. Make sure that the water in the chicken is completely dried in a constant fire.) stir fry the onion, ginger, garlic, pepper, anise, spicy skin. Stir fry and add a small amount of old and raw soy sauce and salt.
Step5:Add some boiled water to the pot. Cover the pot and simmer for half an hour.
Step6:After half an hour of stewing, there is a small amount of soup left in the pot. Add potatoes and continue to stew for about 510 minutes. Do not stir potatoes to the bottom of the pot or mix them with chicken. It is very easy to paste the pot. Put them on the chicken one by one.
Step7:When the potatoes are about to ripen, stir fry them with red and green peppers and green onions.
Step8:According to the situation, add some salt and chicken essence. Stir fry and then serve.
Cooking tips:1 - I use my own domestic chicken, so I add more water. If it's broiler or Sanhuang chicken, just add a little water. Stew for 15 minutes. 2 - not too much oil, but not too little. I can't tell you this quantity in detail. Generally speaking, more is better than less. 3 - chop the chicken into pieces. Do not make it too big (not easy to taste). Do not make it too small (easy to paste the pot). There are skills in making delicious dishes.
