Step1:Wash the treated hairtail and marinate with a little salt and cooking wine for 30 minutes.
Step2:2. Bowl juice. Put 2.5 tbsp soy sauce, 3 tbsp vinegar and 2 tbsp cooking wine for standby.
Step3:3. Pickled hairtail. Stick dry starch on both sides. Stick it evenly one by one. Then fry two sides of golden yellow. Or fry two sides of golden yellow in a pan for standby.
Step4:4. Put oil in the wok and stir the star anise first. Put the onion, ginger and garlic and stir the fragrance. Then put the sauce in the bowl. Then put the hairtail in. Add the boiling water. The water is even with the hairtail.
Step5:5. After the water is boiled, put in a proper amount of salt and 2 tablespoons of sugar. Stew for about 10 minutes. When the soup is thick and sprinkled with scallion, serve.
Cooking tips:1. The hairtail must be fried with golden yellow on both sides for good effect. 2. I use purple forest vinegar for good taste. There are skills in making delicious dishes.
