This soup is made of fresh anchovies and hand-made old tofu. It tastes delicious and has endless aftertaste.
Step1:Clean anchovies. Slice tofu. Break egg
Step2:Heat the oil in the wok. Stir in the cinnamon and ginger. Fry the anchovy one by one (don't touch it. It's easy to break). Fry it for 35 minutes, turn the other side gently with chopsticks and fry it till golden yellow. After frying, pour in some cooking wine. Wait for a while, then put it on a plate and put it out
Step3:In the soup pot, put cold water to boil. Put in ginger. Put in fried anchovies. Bring to a boil. Put in old tofu. Bring to a boil for 10 minutes. Turn to a low heat and put in broken eggs. Put the eggs into the soup pot and mix with a spoon. Bring to a boil for 5 minutes
Step4:Put salt, chicken essence, scallion and start cooking.
