Step2:Put the flour into a stainless steel basin. Then put the fermented yeast into the flour. Pour it in slowly. First use chopsticks to stir it into batting shape. Then use your hands to rub it vigorously. If the flour is too dry, continue to add warm water. (warm water can also be replaced by warm milk. This will make the milk smell more fragrant). Until the three lights (hand light, basin light, dough light) are rubbed
Step3:Because of the low temperature in winter, I put the dough into a pot and put it on the warm water pot for the first fermentation. In this way, the fermentation time is less than an hour. This step is very important. There is no specific time. It depends on the room temperature. It mainly depends on whether the flour is pulled out in honeycomb shape. Or you can press a hole in the middle and not rebound.
Step4:Take out the fermented flour and spread it on the chopping board as much as possible. Let the air out of it. Then knead it vigorously. It's like washing clothes. If it's too sticky and wet, you can knead it while adding some dry flour. Knead for seven or eight minutes.
Step5:Cut the flour into the same equal portion of steamed bread. 400g flour. I made almost 10 of them. (I made the above pictures twice and put them together.)
