Step1:Pour 120g of weighed water into 200g flour for many times (flour water may be slightly different according to season, flour, etc.). Use chopsticks to stir evenly and present flocculent shape. Then, knead it into a shiny dough by hand. Seal it with fresh-keeping film. Place it in the room for about 15-30 minutes.
Step2:Add some salt, monosodium glutamate and five spice powder to the eggs. After breaking up, pour them into the preheated oil pan (a little oil is enough). Spread them into pancake shape. Fry the pancakes and put them in the plate for standby.
Step3:Cut the egg cake into small cubes. Wash the leeks after selection. Cut into small cubes of leeks as much as possible. Then add some salt, monosodium glutamate and five flavor powder to the diced eggs and leeks. Mix them well.
Step4:Wake up the dough and rub it into long strips. Divide it into eight small dough. Press the palms into flat circles and roll them into flat circles with a rolling pin. Put the adjusted filling in the center of the dough. Then fold the dough in half and press the solid edge. Cut off the irregular edges with the edge of the bowl.
Step5:Put the wrapped leek box in the preheated pot. Fry it slowly with a small amount of oil over a small heat until it is slightly yellow. The leek box will be out of the pot.
