Step1:Wash the eel. Remove the head, tail and intestines. Cut into about an inch and a half of eels for use.
Step2:Peel the garlic. Crack the ginger with a knife. Wash and cut the onion and put it into a sand bowl.
Step3:Put the eel section and onion, ginger and garlic into a sand bowl. Pour in water and fire. Then add salt, cooking wine and dry pepper to taste. Add a little sugar to taste and a little soy sauce to color. Then bring to a boil and simmer for 15 to 20 minutes.
