To be honest, I haven't eaten any better vegetarian rice. Full score for nutrition and full score for taste. Why do people who have eaten it say it's delicious? I guess it's about using the old-fashioned iron pot to cook it. The rice cooker doesn't taste like this. But there's a little better secret.
Step1:Soak chickpeas one night or most days in advance. Use hot water.
Step2:Soak rice in hot water for an hour / two. One hour in summer and two hours in winter. Don't put too much water. Just a centimeter higher than rice.
Step3:The rice looks like it was soaked for two hours. Yellow carrots. Peel common carrots.
Step4:Rinse figs and raisins. Slice white onions. Slice carrots.
Step5:The stove is on a medium high fire. When the pot is hot, pour in some oil. (sunflower oil or corn oil is the best choice.)
Step6:Heat the oil and stir fry the onions.
Step7:Saute the onions and put in the carrots. Stir fry for one minute.
Step8:Put in the chickpeas. Stir fry for one to two minutes. Add some salt (the amount of salt can't be specified. The taste is different in each family. It depends on your own taste.)
Step9:Add water to the pot. Add a bowl first. Don't add too much.
Step10:Spread the rice on the vegetables. Leave some distance between the rice and the edge of the pot. So that the rice won't stick to the pot.
Step11:Adjust the water volume. Water is the same height as rice or a little bit less. Too much water makes the rice stick. Put figs on the rice.
Step12:Cover the pot. My pot cover doesn't fit very well. Just cover it with a rag. Turn down the heat a minute after the water in the pot boils. 20-25 minutes.
Step13:I opened it 23 minutes after I closed it this time. Rice is just fine. Very fragrant.
Step14:Put the raisins on. Mix them with a spatula.
Step15:Here comes the better secret recipe. A small piece of butter (about 10 grams). It's not as delicious as it is. Some words add to the cake.
Step16:Put the butter on. Cover it. The low fire lasts for one minute. Turn off the fire for 5 minutes.
Step17:Open the lid again. Turn it over. Then we can have dinner.
