Chocolate cake is my favorite recipe. It tastes very moist. Chocolate tastes very strong. But it's not so bitter. The color of Matcha is very suitable for spring. Red beans have to be made by ourselves, so they are not so sweet and greasy. They are pressed in a pressure cooker and then mixed with honey. The taste of the whole cake is the bitterness of Matcha, the richness of chocolate and the sweet taste of condensed milk Mousse in the middle just balance the conflict between the two. This recipe can make a 6-inch square mousse. -
Step1:Heat 45g light cream, 80g chocolate and 35g butter over water until smooth and glossy.
Step2:Add two yolks twice. Continue mixing with a spatula until smooth.
Step3:Add a little salt to the protein. Two drops of lemon juice. Add 50 grams of sugar. Beat until it foams.
Step4:First, sift 1 / 3 cocoa powder and low powder mixture into the chocolate paste. Mix well.
Step5:Add 1/3 of the beaten protein into 4. Mix well.
Step6:After each time you add the powder, add the protein again and mix well. All the powder and protein are added in three times. Make the cake paste.
Step7:Put the cake in a square mold lined with oilpaper. The oven has been baking at 160 degrees for about 40 minutes.
Step8:When baking the cake, you can make honey beans. Put the soaked red beans in a small bowl. Add sugar. Put a steamer in the pressure cooker. Then turn on the medium heat and press for about 10 minutes. Finally, mix in a little honey to taste.
Step9:Cool the baked cake, demould it and cut it into three pieces. Use two of them. Put one piece around mousse to make the bottom of the cake.
Step10:Now make Matcha mousse. Heat 23 grams of water and 23 grams of sugar to over 100 degrees with a small heat. Pour them into two yolks at a time. Stir quickly until they are slightly white. This step is to sterilize the yolk with boiling water. The yolk is used to make mousse soft and smooth. If the yolk is not added into mousse, the taste will be much worse.
Step11:6G of Matcha powder is boiled with 14g of fresh milk. 8g of Gillette tablets are added and soaked in cold water. They are heated in microwave oven for 20 seconds. Gillette is melted. If there is no microwave oven, it can be heat insulated and melted.
Step12:Pour the Matcha liquid into the yolk
Step13:Take another yolk. Add boiling milk. Beat until white. Add condensed milk. Add 5g of Gillette (soak in cold water). Heat up until Gillette dissolves.
Step14:Whisk 165 grams of cream. To six servings. Smooth.
Step15:Add 135 grams of light cream to the egg yolk of Matcha in step 14. Mix well. Add the rest to the condensed yolk solution in step 13. Mix well.
Step16:Put the liqueur on the chocolate cake. (the syrup is made of rum and sugar powder
